Bandwagon owners expanding food family with Sovereign Hills pop up

You know what they say, one man’s trash is another man’s treasure, and this was certainly the case when Dano Clucas locked eyes on an unwanted shipping container.

“It was given to me by a mate who said I can have it if I removed it off his block,” recalls Dano.

Not one to waste an opportunity, the Port Macquarie local has spent the past three months almost single-handedly converting the container into a pop up café while working full-time at he and partner Tash Olynick’s popular William Street foodie venture Bandwagon.

Sovereign Hills is excited to announce this driven duo will expand the Bandwagon family this summer with the opening of Cabin opposite the town centre site.

“We’re calling it Bandwagon’s little sister,” Dano explained.

“We’re hoping to create a hub where people who live out this way can come and hang. They can bring the kids, throw a ball, it’s 100 per cent dog friendly. There is so much space.”

The Cabin will open next month, from 6am daily and serve up some of Bandwagon’s most popular dishes, including the avocado toast with feta, chives and crispy kale, the vegan banana buckwheat waffles, and bacon and egg rolls.

For your caffeine hit, expect the tried and tested Founder blend and various single origins “for the black coffee drinkers”.

The Cabin is consistent with Bandwagon’s warm and rustic theme, which stems from the style adopted for Bootsdarling, a Darlinghurst café Dano and a mate operated during a successful stint in Sydney.

“There was a lot of timber, Western style with saloon doors,” he explains.

“I’ve learned a lot from my first business; what to do, what not to do, but I think the recipe was right.

“I’d had enough of Sydney and it was time to come back home.”

We find Dano on the tools, as the electrical work, parking, alfresco areas and timber decking take shape at the Cabin.

“All the Tallowood benchtops, the cupboards, tiling, cladding, painting, I did myself,” he shares.

He paid tribute to partner Tash for her tireless work behind the scenes. “All the systems and back of house. She is so great at organising.

“We’re working really hard to produce something the areas hasn’t had before.

“I like good tunes, good coffee, good food. What else could you want really?”
